New to JADAM. Need help to start experimenting

First of all, thank you Mr. Cho and the entire JADAM community for sharing your knowledge and experience.

I am from CANARY ISLANDS (Spain). Just finished reading and viewing all I could find on JADAM. It's been a few very illuminating days, and I've got a lot of practical questions, because I am eager to start experimenting with our local conditions. We've got a few interesting endemic plants for JHS to experiment with too :)

As an small peripheral region we are highly dependent on importing some key products, which is to say bad news for our farmers. We are somehow handicapped regarding finding some major ingredients at low prices (e.g. canola oil, or any other oil for that matter...) in order to make it low-cost in the long term. But, I am determined to put effort into making it work for our region.

So head and hands on it, I will appreciate your support.
Just two questions will follow for now.
