JMS experiment with leftover sweet potato

Have you ever tried to make JMS with leftovers that may not be ideal? 
I was cleaning my fridge and found a recently baked sweet potato. This one was baked in olive oil and seasoned with sea salt. I did not want to waste the food so I decided to try and make JMS from it.
Today on day 2, the foam is forming steadily and heavily(!) but I can see also the oil still on the surface mixed in with the bubbles.
The olive oil that was on the potato does not seem to be inhibiting the microbial growth at all, but should I be worried when I am applying it? it is organic and natural olive oil.
I will not be spraying the JMS on leaves, only on existing soil beds and piles of fallen leaves, charcoal, etc but not on live leaves. 
What are your thoughts on this?
